In the heart of Tokyo, wooden panels, velvety sofas, and white tablecloths recreate the décor of a Parisian apartment—an atmosphere worthy of its gastronomic heritage, complemented by the chef’s personal touch. Chef
Chef Dominique Bouchet, considered one of France’s greatest chefs, has extended his reach beyond Europe to Asia’s celebrated culinary capital, Tokyo. He began his journey by apprenticing under Burgundian chef Marcel Pouilly, followed by studies at the Hotel Management School. At age 22, he was hired by Joël Robuchon at the opening of the Concorde Lafayette Hotel in 1974. In 1978, he became Chef de Cuisine at the Jamin restaurant in Paris, awarded 2 Michelin stars. Since then, he has never left the world of starred properties.
