Tucked away in a quiet residential district of Sapporo, Molière’s floor-to-ceiling glass windows look out over Maruyama Park. Thick, double doors keep the warmth in, opening onto a chic dining room in milk-chocolate and ivory tones. Filled with natural light from expansive windows and decorated with seasonal motifs, the room brings the season outside vividly indoors.
A large central table serves as the hub for the service team, who support each table with drinks and other requests from here. This arrangement—together with the generous spacing between tables—creates an intimate sense of privacy within the cozy space. As you gaze out across Maruyama Park, where tall trees sway in the breeze, you can truly retreat from the city’s pace.
World-renowned French cuisine is served in bright, modern surroundings, executed with a deft touch by Chef Hiroshi Nakamichi and a team trained by him over almost forty years. His dishes pay homage to Hokkaido’s abundant natural resources; their apparent traditionalism conceals exceptional skill in drawing out the flavors of local ingredients, such as roast duck with salsify confit, Tokachi beef, herb-scented locally raised lamb, and turbot carpaccio with seasonal vegetables.

Chef
Hiroshi Nakamichi was born in 1951 in Noboribetsu, Hokkaido, Japan. After three years of training in France, he returned to Japan in 1974 and opened his first restaurant in Sapporo, “Restaurant Molière,” in 1982; afterwards, he went on to found four restaurants in Hokkaido.
Hiroshi Nakamichi was appointed Culinary Advisor for the 34th G8 Summit at Lake Toya, Hokkaido, in 2006. He was then awarded three stars in the special edition of the Michelin Guide Hokkaido 2012. “The Restaurant Molière” became a member of Relais & Châteaux in 2014, and in 2015 he was appointed Culinary Advisor to Four Seasons Tokyo’s fine-dining restaurant “MOTIF.”
