Narisawa (ナリサワ)

Ranked 19th on Asia’s 50 Best Restaurants, Narisawa is one of the world’s finest places to appreciate Japanese winemaking—Pinot Noir from Nagano, Riesling from Iwate, and aged Bordeaux-style blends from Yamagata. Narisawa’s omakase expresses a culture of respecting the earth through food. The chef maintains close relationships with local fishermen, sourcing precisely the amounts he needs to ensure zero food waste.
Owner Yoshihiro Narisawa describes his theme as “sustainability and gastronomy,” connecting diners with the natural world. At Narisawa, you’ll find cuisine that celebrates the richness of Japan’s environment while satisfying cravings for both healthful and refined food. The restaurant also won the inaugural Sustainable Restaurant Award.
Yoshihiro Narisawa defines his cuisine as “innovative Satoyama,” with “Satoyama” referring to the border zone between mountain foothills and flatlands—places where people live sustainably alongside nature. Diners fall under the spell of the season, tasting fleeting flavors from provinces across the country. Depending on the time of year, you might try a broth made from a poisonous snake that lives in waters near Okinawa, or a warm sashimi course of langoustine from Suruga Bay.

Chef
Yoshihiro Narisawa left home at 19 and spent eight years honing his craft in some of Europe’s most revered kitchens, including those of the late Paul Bocuse and Joël Robuchon. In 1996, he returned to Japan and opened La Napoule in Kanagawa Prefecture. Seven years later, he moved to his current location in Tokyo’s non-touristy Minami Aoyama district and established Les Créations de Narisawa. After eight years of service, he renamed the restaurant simply Narisawa.
